Wagyu Tri-Tip(Mini Brisket)

1. Preheat your smoker to 225F or 230F.
2. Trim down excess fat from the Tri-Tip, since this is Wagyu you can take it down pretty low to the meat.
3. Throw down some Fire+Society Beef Rub on both sides of the Tri-Tip. You can use a binder id you'd like.
3. Throw into the smoker until internal reaches 175F, by then the bark will be set.
4. Once at 175F, pull the Tri-Tip. Increase the smoker to 250F.
5. Mix about 4oz of Apple Cider vinegar and 4oz of water into a spray bottle. You can refrigerate this stuff for other cooks.
6. Lay down some butcher paper and spray the paper before placing the Tri-Tip on it.
7. Wrap the Tri-Tip like a mini present.
8. Place back into the smoker at 250F until we reach an internal of 205F.
9. Let it rest for an hour, or sooner if you're hungry lol.
